Give this retro salad a modern twist with GOLDCREST’s delicious products.
Quick Avocado Ritz
- ¾ cup (180ml) good quality mayonnaise
- 2 tbsp (30ml) sweet chilli sauce
- 2 tbsp (30ml) tomato sauce
- grated rind and juice of 1 lime
- 2 tsp (10ml) GOLDCREST ginger
- 1 garlic clove, crushed
- salt and ground black pepper
- 3 avocados, peeled and halved
- 2 x 170g tin GOLDCREST shrimp, drained
- 1 red onion, finely chopped
- 1 x 310g tin GOLDCREST mandarin slices
- handful watercress leaves, to serve
- 1 lime, sliced in segments to serve
- In a bowl, combine the mayonnaise, sweet chilli sauce, tomato sauce, lime juice and zest, GOLDCREST ginger, garlic and season with salt and black pepper. Set aside.
- Place the avocado halves on serving plates. Top with GOLDCREST shrimp, red onion and GOLDCREST mandarin slices. Spoon 1 tablespoon (15ml) of mayonnaise mixture onto each avocado half, garnish with watercress leaves and serve with extra wedges of lime.
